WHAT'S
FOR DINNER MARGRIT?
FRIED CATFISH
Figure a fillet per
guest. I like catfish in nuggets, so cut 'em into nice chunks.
Dredge each of these nice chunks in a mixture of 2/3 cornmeal
and 1/3 matzo meal (This dish is great for your Southern Passover
dinner) with any amount of salt and pepper YOU require. I like
it pretty salty. Pretty and salty. Now dip these nice chunks in
either a) a couple of beaten up raw egg or b) milk, and then redip
into the meal. Yes folks, we're double dippin'. Good for the crust.
When all your chunks
are good 'n ready, get fryin' in a 1/4 inch (or more depending
on your dietary restrictions) of tasty oil. Now me, I like extra
virgins. Olive oil that is. Cook until proverbially golden-brown.
Then you gotta drain 'em. Use recyclable brown paper bags (lest
Matt Gonzalez weep) to soak up the grease. Stir up the excess
meal, eggs/milk add a little baking powder and diced onion(it
should be sticky but not runny). Fry up this batter until golden-brown,
drain, and you got hushpuppies.
Serve with lotsa
fresh lemons, lotsa love, and home-made tartar sauce (see below).
HOMEMADE TARTAR SAUCE
If you are really
ambitious, make your own mayonnaise. (Look elsewhere for that
one dear). Finely dice some onions, squeeze a bunch 'o lemon and
mix it into yer mayonnaise. I don't like it with relish but if
you relish relish add that too. Amounts will vary according to
your appetites, needs, number of guests, and dietary restrictions.
Mayonnaise is low-carb, so eat lots of it.
